Gulasch
By Groceree
Also known as Rindergulasch · German Goulash
The German take: a thick stew rather than the Hungarian soup, with as much onion as beef, cooked down for two and a half hours until the onions vanish into the sauce.

Notes
- This is not the Hungarian dish. Gulyás is a soup with potatoes; German Gulasch is a thick stew with no potatoes in it, served with something to soak it up.
- Equal weights of onion and beef. The onions dissolve completely and thicken the sauce without any flour.
- The splash of vinegar at the end is what stops all that onion and paprika tasting flat.
- Serve with Spätzle, dumplings or boiled potatoes to soak up the sauce.
