Instructions
Rolls
- 01
Cut the core out of the and lower the whole large head into boiling water. Peel off the leaves as they soften, a few at a time, for about 10 minutes.
- 02
Pare down the thick rib on each leaf with a knife so it will roll without cracking.
- 03
Boil the for 8 minutes, so it is still firm at the centre, then drain it and spread it out to cool.
- 04
Finely chop the , crush the and beat the . Mix the with the par-cooked , the , , , dried , and freshly ground .
- 05
Put a good spoonful near the base of each leaf, fold the sides in and roll up tightly.
Braising
- 06
Heat the oven to 160°C. Line the base of a heavy, lidded ovenproof pot with any torn or leftover leaves — they stop the catching on the base.
- 07
Pack the in seam side down, in tight layers so they cannot unravel.
- 08
Mix the , , and , season with and , and pour over with the and dots of .
- 09
Cover with the lid and cook in the oven for 90 minutes, until a knife slides through a roll with no resistance and the filling is cooked through (75°C at the centre).
- 10
Let them settle for 15 minutes before serving with the spooned over.
Notes
- Par-cook the rice, do not use it raw or fully cooked. Raw rice drinks the sauce dry; cooked rice turns to paste over ninety minutes.
- Pack them tightly. Rolls with room to move come undone and you end up with stuffing soup.
- Shaving the leaf rib down is the fiddly step everyone skips, and it is why the leaves crack.

- SharlotkaRussia's everyday apple cake: eggs and sugar whisked until thick and pale, flour folded in by hand, and the airy batter poured over a tin of tart apple chunks. There is no baking powder, as the eggs alone raise the sponge, which bakes light and moist around the soft, sharp apples under a thin, crackly sugar crust.
- Tykvennaya KashaRussian millet porridge for autumn mornings: diced pumpkin simmered in water until soft, then well-rinsed millet, then whole milk with a little sugar, cooked gently until thick, creamy and orange. Butter is stirred in at the end, and an optional 20 to 30 minutes in the oven gives the golden-skinned, baked texture of kasha from a Russian stove.
