Norwegian Fish Soup
By Groceree
Also known as Bergen Fish Soup · Bergensk Fiskesuppe
Fiskesuppe in the Bergen style: a cream and fish stock base cut with vinegar and a little sugar, carrying matchsticks of carrot and leek, with cod and salmon poached in it at the last minute. The sweet and sour seasoning is what separates it from an ordinary chowder.

Ingredients

leeks1
carrots2- celeriac (optional)150 g
- fish stock800 ml
- double cream200 ml
soured cream100 ml
white wine vinegar1 tbsp
caster sugar1 tsp
cod fillets300 g
salmon fillets300 g
dill4 tbsp
salt
white pepper
Instructions
- 01
Halve the lengthways and cut it into fine strips about 5 cm long. Cut the , and the if using, into fine matchsticks. Melt the in a wide pan over low heat and sweat the , and for 5 minutes, stirring so nothing takes on any colour. The soup should stay pale.
- 02
Pour in the , bring to a gentle simmer and cook for 8 to 10 minutes, until the vegetables are tender but the still has some bite.
- 03
Add the and simmer for another 5 minutes, uncovered; the soup stays light and pourable.
- 04
Season now, before the fish goes in: the , the , then and . Taste and keep adjusting until it is noticeably sweet and sour rather than simply rich. This is the point where the soup either becomes fiskesuppe or stays a plain chowder.
- 05
Skin the and and cut them into 3 cm chunks. Turn the heat down until the surface is barely trembling and slide in the and . Poach for 4 to 5 minutes without stirring, until the pieces have turned opaque and flake when pushed with a spoon.
- 06
Chop the . Take the pan off the heat, stir in the and most of the with a light hand so the fish stays whole, and check the seasoning once more.
- 07
Ladle into warm bowls, keeping the pieces of fish intact, and finish with the remaining .
Notes
- Add the soured cream off the heat and never let the soup boil afterwards, or it will curdle into grains. For the same reason, reheat leftovers gently and stop well short of a simmer.
- The fish is poached, not boiled. A rolling simmer breaks cod into threads and squeezes the salmon dry within a minute, so turn the heat down until the surface barely trembles before the fish goes in, and keep it there.
- The base up to the seasoning step keeps two days in the fridge and is what you should make ahead. Bring it back to a bare simmer and poach the fish to order, which also means you can stretch it with a handful of peeled prawns or mussels.

Dots of redcurrant jelly on top add a sharp finish to the sweet, crunchy and creamy layers.
- OmenapiirakkaThis everyday Finnish apple pie needs no pastry: a thick, buttery batter flavoured with cardamom is spread into a pie tin, covered with overlapping apple slices and sprinkled with cinnamon sugar. In a hot oven the soft cake rises golden around the fruit.
