- 02
Peel the and the . Drain the soaked and put them in a wide heavy pot with the , , the whole , the , the leaf and the .
- 03
Cover with cold water by 4 cm and bring slowly to the boil. Skim off everything that rises.
- 04
Turn it down to the barest simmer. Add a splash of cold water whenever it threatens to boil — Asturians call this asustar, frightening the , and it stops the skins splitting.
- 05
After 1 hour, add the and the whole, nestling them among the . Never cut them or they collapse and cloud the broth.
- 06
Cook for 60 to 90 minutes more, until the are completely soft but still whole, adding the and the for the last 15 minutes.
- 07
Never stir with a spoon. Shake the pot by its handles instead.

Season with only now; the cured meats bring most of it.

Rest off the heat for 30 minutes so the broth thickens. Lift out and discard the and leaf, then lift out the meats, slice them and serve them alongside the .
Notes
- Shake, never stir. A wooden spoon breaks the beans and turns the broth to mush, which is the one unforgivable fabada fault.
- The meats go in whole and are sliced at the end. Cut up beforehand they disintegrate and everything tastes the same.
- Rest it, and if you can, make it a day ahead. The broth thickens as it cools and reheats better than almost any stew.
