By Groceree
Also known as Egg Flower Soup
Chicken broth thickened lightly with cornflour, then egg poured in a thin stream while the soup moves, so it sets into ribbons rather than lumps.

Ingredients
chicken stock1 l
eggs3
cornflour2 tbsp
ginger10 g
spring onions3
sesame oil1 tsp
light soy sauce1 tsp
white pepper½ tsp
ground turmeric (optional)1 pinch
salt
water3 tbsp
Instructions
- 01
Finely grate the and finely slice the . Mix the with the until smooth.
- 02
Bring the well-flavoured to a simmer with the , the , the and the if you want the colour.
- 03
Stir the mixture again, stir it into the soup and simmer for 1 minute until the soup thickens very slightly. This is what suspends the ribbons instead of letting them sink.
- 04
Beat the well and pour them through the tines of a fork, from a height, in a thin steady stream.
- 05
At the same time stir the soup slowly in one direction with a chopstick. Stir fast and you get scrambled ; do not stir at all and you get a sheet.
- 06
Take it off the heat the moment the last of the is in. It sets in seconds.
- 07
Season with , add the and scatter with the sliced .
Notes
- Thicken before the egg goes in. Without the cornflour the ribbons sink and clump at the bottom.
- Pour high and thin, stir slow. Those two things together are the whole technique.
- Off the heat immediately. Egg that keeps cooking in the pot turns rubbery and cloudy.
