Meats
- 01
Build a fire and let it burn down to steady, glowing coals. Flames scorch; coals cook.
- 02
Cut the into thick strips, keeping the fat on. Thread the , , and onto separate long skewers, folding the strips so the fat sits on the outside.
- 03
everything heavily with 30 minutes before it goes on, and knock the excess off.
- 04
Start the first, furthest from the heat, and give them 1½ to 2 hours, turning often, until the meat is tender and pulls away from the bone.
- 05
About 30 minutes before the are done, add the boneless and the and grill them for 15 to 20 minutes, turning often, until the reaches 75°C inside with clear juices and the are cooked through with no pink. Add the last — it needs only 10 to 12 minutes.
- 06
Slice the outer cooked layer off the and skewers straight onto the plate, then return them to the fire to cook the next layer. Serve the and only once they are cooked right through, never sliced off in layers.
To serve
- 07
Finely dice the and and chop the . Mix the finely diced tomato and , the chopped , the and the for the vinaigrette and let it sit for 20 minutes.
- 08
Toast the in the , stirring constantly, until golden and sandy — that is farofa.
- 09
Serve the sliced with both, and eat as it comes off the fire rather than all at once.
Notes
- Coarse salt and nothing else. No marinade, no rub: churrasco is about the meat and the fire, and Brazilian churrascarias season with salt alone.
- Slice the outside off the beef and put the skewer back. Cooking a whole joint through leaves the outside dry by the time the middle is done.
- It is served continuously, not plated. Meats come off in waves, which is why the accompaniments stay on the table throughout.
- Linguiça is usually just pork, garlic and paprika, but British pork sausages often contain rusk; if you use them, choose gluten-free ones and check the label.

- Camarão na MorangaA whole pumpkin baked in foil until tender, then filled with prawns in a creamy tomato sauce thickened with flesh scraped from its own walls. Cream cheese, standing in for Brazil's requeijão or Catupiry, lines the shell and melts into the sauce during a short final spell in the oven, so each spoonful brings prawns, sauce and soft pumpkin together.
