Camarão na Moranga
By Groceree
Also known as Brazilian Shrimp in Pumpkin
A whole pumpkin baked in foil until tender, then filled with prawns in a creamy tomato sauce thickened with flesh scraped from its own walls. Cream cheese, standing in for Brazil's requeijão or Catupiry, lines the shell and melts into the sauce during a short final spell in the oven, so each spoonful brings prawns, sauce and soft pumpkin together.

Ingredients
whole pumpkin2½ kg
raw king prawns800 g
limes2
olive oil3 tbsp
onions1
garlic cloves4
tomatoes4
tomato paste1 tbsp- double cream200 ml
cream cheese300 g
flat-leaf parsley1 handful
salt
black pepper
Instructions
- 01
Heat the oven to 200°C. Scrub the , which should be round and flat-based. With a sturdy knife, cut a lid about 14 cm across around the stalk, angling the blade towards the centre so the lid cannot drop inside, and lift it off.
- 02
Scrape the seeds and stringy fibres out of the and off the lid with a metal spoon. Season the inside with and , put the lid back on and wrap the in foil.
- 03
Stand the in an ovenproof dish a little wider than its base, the one it will be served in, since once cooked it is too soft to move safely. Bake for 60 to 75 minutes, then fold back the foil at the top, lift the lid with an oven glove and test: a knife pushed into the flesh inside should slide in easily while the outside still holds firm. If not, put the lid back, close the foil and bake for 10 more minutes.
- 04
Meanwhile, finely chop the , and , and deseed and chop the . Peel and devein the if they are shell-on; 800 g peeled is about 1.3 kg in the shell. Take the out of the fridge to soften.
- 05
When the has about 30 minutes to go, toss the with the juice of 1 and a little and , and leave them for 10 minutes, no longer, as the juice starts to firm them. Drain them and pat dry with kitchen paper so they sear rather than stew.
- 06
Heat 1 tbsp of the in a large, deep frying pan over high heat and sear the in two batches for 1 minute per side, just until they turn pink. Tip them onto a plate; they finish cooking in the oven, and cooked through now they would turn rubbery.
- 07
Lower the heat to medium, add the remaining 2 tbsp of and the , and cook for 6 to 8 minutes, until soft. Stir in the for 1 minute, then add the and the and cook for 8 to 10 minutes, stirring often, until the break down into a thick sauce.
- 08
Take the out, leaving the oven on, and unwrap it, keeping clear of the steam. Lift off the lid and set it aside, and spoon out any liquid that has gathered inside. Scrape about 300 g of flesh from the inside with a spoon, leaving a wall about 2 cm thick so the shell holds its shape.
- 09
Mash the scraped flesh into the sauce with a fork, stir in the and simmer for 5 minutes, until the sauce is thick enough to coat the back of a spoon.
- 10
Take the pan off the heat and stir in 100 g of the until it melts into the sauce. Add the with any juices from the plate, the and the juice of the second , and season with and .
- 11
Spread the remaining 200 g of over the inside of the with the back of a spoon, then pour in the sauce.
- 12
Return the to the oven, uncovered, and bake for 10 to 15 minutes, until the sauce bubbles and the at the edges has melted into it.
- 13
Set the lid back on and bring the to the table. Serve the and sauce with soft scraped from the walls of the shell.
Notes
- Choose a dense eating pumpkin such as a Crown Prince or a large kabocha. Carving pumpkins are watery and stringy, and their thin walls can split under the weight of the sauce.
- Use full-fat cream cheese, softened at room temperature. It is the closest supermarket stand-in for requeijão cremoso or Catupiry, and lighter versions turn grainy in the heat.
- Coconut milk instead of the double cream, and coriander instead of the parsley, give the sauce a lighter, Bahian flavour.
