  2. 02

Grill the fresh over medium coals for 15 to 20 minutes, turning often, until firm and cooked through with no pink inside. Medium, not fierce — fresh needs to cook through and the fat needs time to render.

  3. 03

Do not prick them. The fat is what keeps the sausage juicy.

  4. 04

Split each one lengthways almost through and open it out flat, a cut called mariposa, butterfly.

  5. 05

Put them back on the grill cut side down for 2 minutes to char the inside.

  6. 06

Split the crusty and warm them on the edge of the grill, cut side down, so they take up some fat.

  7. 07

Lay a butterflied in each and spoon over plenty of chimichurri.

Notes

  • Fresh chorizo, not the hard cured Spanish kind. They are completely different products and only the fresh one works here.
  • Butterflying it is not just for looks — it doubles the surface that chars and makes the sandwich sit flat.
  • Chimichurri is the only condiment. No ketchup, no mayonnaise, no cheese.
