Notes
- Panko, not ordinary breadcrumbs. The flakes are larger and drier, which is why katsu stays crisp rather than going soft.
- Flatten the chicken to an even thickness or the thin end overcooks while the thick end is raw.
- The sauce keeps five days and freezes well, so it is worth making a double batch.

- Kabocha no NimonoChunks of kabocha simmered skin side down in dashi with sugar, mirin, sake and soy sauce under a drop lid until just tender, then left to cool in the liquid so the sweet-salty seasoning soaks right in. Patches of skin are peeled away to let the flavour in and the edges are bevelled so each piece holds its shape, and the dense flesh turns soft, sweet and almost chestnut-like.
- ChawanmushiA savoury egg custard set so gently in dashi that it barely holds its shape, hiding a prawn, a piece of chicken and a shiitake. Silky, never bubbled.
- HambaguJuicy patties of beef and pork mince with softened onion and milk-soaked panko, seared then steamed until plump, and glazed in a quick sauce of ketchup, Worcestershire sauce, red wine and the pan juices. A favourite of Japanese home cooking.
