- 04
Add the and simmer for 5 minutes until slightly thickened.

Notes
- The beef cooks twice — once in the sear and once in the warming through. Cooking it fully at the start gives you grey, tough strips.
- Let the mushrooms release and evaporate their water before the liquid goes in, or the sauce will be thin.
- Serve with buttered noodles, rice or straw potatoes rather than mash, which drowns it.

- SharlotkaRussia's everyday apple cake: eggs and sugar whisked until thick and pale, flour folded in by hand, and the airy batter poured over a tin of tart apple chunks. There is no baking powder, as the eggs alone raise the sponge, which bakes light and moist around the soft, sharp apples under a thin, crackly sugar crust.
- Tykvennaya KashaRussian millet porridge for autumn mornings: diced pumpkin simmered in water until soft, then well-rinsed millet, then whole milk with a little sugar, cooked gently until thick, creamy and orange. Butter is stirred in at the end, and an optional 20 to 30 minutes in the oven gives the golden-skinned, baked texture of kasha from a Russian stove.
