Ingredients
pork belly1 kg
eggs8
caster sugar4 tbsp
coconut water500 ml
fish sauce5 tbsp
shallots3
garlic cloves4
black pepper1 tsp
spring onions2- red chillies (optional)1
rice400 g
water300 ml
Instructions
- 01
Cut the into 4 cm chunks, keeping the skin and fat on each piece. Blanch them for 3 minutes in boiling water, drain and rinse. This gets rid of the scum so the sauce stays clear.
- 02
Finely chop the and crush the . Mix them into the with 3 tablespoons of the and the , cover and marinate in the fridge for 30 minutes.
- 03
While the marinates, lower the into boiling water and cook them for 9 minutes, then cool them in cold water and peel them.
- 04
Make the caramel: melt the in the pot over medium heat, without stirring, until it turns the colour of dark honey. Take it off before it smokes — a second too long and it is bitter.
- 05
Add the and all its marinade to the caramel and turn it until coated.
- 06
Pour in the , the rest of the and the , which should barely cover the .
- 07
Simmer uncovered, very gently, for 1 hour. Skim the fat now and then.
- 08
Add the peeled and cook for 30 minutes more, turning them so they colour evenly. Meanwhile, rinse the and cook it following the packet instructions.
- 09
It is ready when the is tender, the skin translucent and the sauce is glossy and dark. Thinly slice the and the , if using, scatter them over and serve with the .
Notes
- Coconut water, not coconut milk. It adds a clean sweetness and keeps the sauce clear; milk would make it cloudy and heavy.
- Watch the caramel. Dark honey is right, mahogany is too far, and burnt caramel ruins the whole pot.
- Made in enormous batches for Tet and reheated over several days, improving each time.
