Ingredients
- paella rice400 g
- fish stock1.2 l
- saffron threads1 pinch
raw king prawns12
mussels500 g
squid300 g
onions1
garlic cloves3
tomatoes2
sweet paprika1 tsp
green beans (optional)150 g
olive oil4 tbsp
salt
lemons1
Instructions
- 01
Heat the in a saucepan and keep it hot. Clean the and cut the bodies into rings. Halve the and grate the cut sides on a box grater, discarding the skins. Finely chop the and the , and trim the if using. Scrub and debeard the , throwing away any open ones that do not close when tapped. Cut the into wedges.
- 02
Steep the in a ladleful of the hot .
- 03
Fry the rings in the in a wide paella pan (about 38 to 40 cm across) for 2 minutes and lift them out. Soften the in the same , then add the and the and stir for 30 seconds.
- 04
Add the grated and cook it down to a dark, jammy sofrito, about 8 minutes. This is where the flavour comes from, so do not hurry it.
- 05
Stir in the and the , if using, until every grain is coated, then pour in all but a ladleful of the and the liquid. Season with and spread the flat.
- 06
From here, do not stir. Boil hard for 10 minutes, then lower to a simmer for 8 more minutes.
- 07
Press the and the , hinge down, into the surface of the , scatter over the and cook for a final 5 minutes, turning the once, until they are pink and the have opened. Discard any that stay shut. If the is still hard when the liquid has gone, sprinkle over the reserved , heated, without stirring.
- 08
Turn the heat up for 60 to 90 seconds and listen for a faint crackle — that is the socarrat forming underneath. Pull it off the heat the moment you smell toast.
- 09
Cover with a cloth and rest for 5 minutes. Serve from the pan with wedges.
Notes
- Stirring turns it into risotto. The rice has to sit still so the base can catch and form the socarrat, the crust everyone fights over.
- A wide, shallow pan matters more than the rice variety: the layer should be about two grains deep.
- No chorizo. It is a Valencian rice dish, and paprika sausage bulldozes the saffron.
