Salmorejo

By Groceree

Also known as Salmorejo Cordobés

A bowl of thick orange salmorejo topped with chopped jamón and boiled egg

Thicker and smoother than gazpacho, and built on four ingredients: tomatoes, bread, garlic and a great deal of olive oil emulsified until it turns pale orange and glossy.

Ingredients

Servings:4
  • tomatoes1 kg
  • white bread200 g
  • garlic cloves1
  • extra virgin olive oil150 ml
  • sherry vinegar1 tbsp
  • salt1½ tsp
  • serrano ham80 g
  • eggs2

Instructions

  1. 01

Core and roughly chop the , then blend them alone first and pass them through a sieve if you want it truly smooth. Skins and seeds are the only thing standing between this and velvet.

  2. 02

Tear the into the and leave it to soak for 10 minutes.

  3. 03

While the soaks, lower the into a pan of boiling water and cook for 10 minutes. Cool them in cold water, peel them and keep them in the fridge until serving.

  4. 04

Peel the and blend it into the and with the until completely smooth, a good 2 minutes.

  5. 05

With the blender running, pour in all but 2 tablespoons of the in a thin stream. It will thicken and turn from red to pale salmon as it emulsifies — that colour change is how you know it has worked.

  6. 06

Add the and check the .

  7. 07

Chill for at least 2 hours. Chop the and and serve the salmorejo in bowls topped with them and a last drizzle of .

Notes

  • Pour the oil in slowly with the motor running. Tipped in at once it will not emulsify and the soup stays thin and red instead of thick and orange.
  • One clove of garlic, not more. Salmorejo is eaten cold and raw garlic grows louder in the fridge.
  • It should be thick enough to eat with a spoon and almost a dip. Gazpacho is the drinkable one.
