Ingredients
- octopus1½ kg
waxy potatoes700 g
onions1
bay leaves1
sweet paprika2 tsp
smoked paprika1 tsp
coarse sea salt2 tsp
olive oil6 tbsp
Instructions
- 01
If the is fresh, freeze it for 48 hours, then thaw it overnight in the fridge. Freezing breaks down the fibres and is the easiest way to guarantee tenderness.
- 02
Halve the and bring a large pot of water to the boil with the and the leaf.
- 03
Hold the by the head and dip it into the boiling water three times, a few seconds each, so the tentacles curl. Then lower it in.
- 04
Simmer for 40 to 50 minutes depending on size. Test with a skewer in the thickest part of a tentacle — it should slide in easily.
- 05
Leave it to rest in the water off the heat for 15 minutes.
- 06
Lift the out and keep it covered. Peel the and boil them in its cooking water, which colours and seasons them, for about 20 minutes until tender, then slice into thick rounds.
- 07
Dip the back into the hot water for a few seconds to warm it, then cut the tentacles into 1 cm rounds with scissors, which tears less than a knife, and cut the head into small pieces.
- 08
Arrange the over the on a wooden plate, sprinkle with the , and , and pour the over generously.
Notes
- Freeze it first, or buy it frozen. This is the standard trick and it does more for tenderness than any amount of simmering.
- The three dips before it goes in set the skin so it does not peel away, and curl the tentacles into the classic shape.
- Boil the potatoes in the octopus water. It is free colour and flavour and it is how it is done in Galicia.
