brown sugar1 tbsp
water650 ml
rice300 g

Cut the into 4 cm cubes, lightly crush the and crack the . Put the , , , , , and 200 ml of the in a heavy pan. Marinating first is optional; the braise does the work.
- 02
Bring to the boil and let it bubble uncovered for 5 minutes without stirring. Stirring before it has boiled off its edge leaves a raw, harsh taste.
- 03
Cover and simmer gently for 45 minutes, until a fork goes into the with no resistance.
- 04
While the simmers, rinse the in a sieve under the cold tap until it runs clear. Put it in a pan with the remaining 450 ml of , bring to the boil, then cover and cook on the lowest heat for 15 minutes. Leave it covered off the heat for 10 minutes.
- 05
Lift the out. Add the and boil the liquid hard until it reduces to a glossy few spoonfuls.
- 06
Return the and turn it in the glaze over medium heat until the fat catches and browns at the edges.
- 07
Serve the with the and spoon the glaze over.
Notes
- Do not stir for those first 5 minutes of boiling. It is the one rule every Filipino cook repeats, and it genuinely changes how the vinegar tastes.
- Soy to vinegar at one to one is the classic ratio. Shift it either way to taste, but keep them in the same ballpark.
- Adobo is better the next day, and better again the day after. It keeps for 3 to 4 days in the fridge, or freeze it.
