Philly Cheesesteak
By Groceree
Also known as Cheesesteak
The Philadelphia sandwich: ribeye sliced paper-thin, griddled hard with onions and chopped with the edge of a spatula as it cooks, then loaded into a hoagie roll under melting provolone. Part-freezing the steak first is what makes slices thin enough to cook through in two minutes and still come out juicy.

Ingredients
ribeye steak800 g
onions2
green peppers (optional)1
vegetable oil2 tbsp
butter1 tbsp
provolone200 g- hoagie rolls4
salt
black pepper
water1 tbsp
Instructions
- 01
Trim the of gristle and put it in the freezer for 30 to 45 minutes, until it is firm at the edges but still yields in the centre. Slice it across the grain as thinly as you possibly can, 1 to 2 mm, then pile the slices up and run the knife through them a few times. Cold meat is the only way to get slices this thin without a slicer.
- 02
Heat the in a large flat-bottomed frying pan or on a griddle over medium-high heat. Thinly slice the , and deseed and thinly slice the if using. Add them to the pan with a pinch of and cook for 8 to 10 minutes until soft, floppy and browned at the edges. Push them to one side of the pan.
- 03
Turn the heat to high and add the . Spread the beef out in a thin layer in the clear part of the pan and leave it alone for 1 minute so it takes some colour.
- 04
Now chop and turn it with the edge of a metal spatula, breaking the slices into ragged pieces as they cook. It is done in 2 to 3 minutes, while there is still a little pink showing; cook it past that and it goes grey and tough.
- 05
Mix the through the meat, season with and freshly ground , and rake the whole lot into four long piles the shape of your . Lay two slices of over each pile.
- 06
Splash a tablespoon of water into a bare patch of the pan and cover for 30 seconds. The steam melts the cheese down into the meat instead of leaving it sitting on top.
- 07
Split each almost all the way through, press it down over a pile, slide the spatula underneath, and flip the whole thing over so the meat lands in the cheese side down. Serve immediately, while the is still warm from the pan.
Notes
- For the Cheez Whiz version, leave the cheese out of the pan, warm 150 g of it with a splash of milk until pourable, and spoon it into the open roll before you load the meat in.
- The roll should be soft enough to squash but sturdy enough to hold juice without dissolving: a plain white Italian-style sub. A baguette shreds the roof of your mouth and brioche turns to sludge.
- Cook the beef in two batches if your pan is smaller than about 28 cm. Piled up in a crowded pan it releases liquid and boils, and you end up with grey stewed meat rather than browned edges.

- Baked Chicken and PotatoesBone-in chicken thighs and drumsticks rubbed with smoked paprika and olive oil and roasted at 220°C on a bed of potato chunks, whole garlic cloves, lemon wedges and rosemary. Fat from the crisping skin drips into the potatoes, which get 10 more minutes on their own while the chicken rests, and the soft garlic and roasted lemon are squeezed into the pan juices that coat the potatoes.
- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
- Braised Short RibsBone-in beef short ribs seasoned and seared hard, then cooked slowly in the oven in reduced red wine and beef stock with carrots, onion, celery, garlic, thyme, rosemary and bay until the meat slips from the bone. Strained, skimmed of fat and boiled down, the braising liquid turns into a dark, glossy sauce, and gremolata or parsley scattered over at the end cuts the richness.
