Instructions
Kebabs
- 01
Grind the to a powder with a pinch of the , then steep it in the 3 tablespoons of , just off the boil, for 15 minutes. Steeping is what releases the colour; thrown in dry it does almost nothing.
- 02
Grate the , keeping its juice, and squeeze the juice from 1 . Mix half the liquid with the grated and its juice, the , juice, , the rest of the and the .
- 03
Cut the into 4 cm chunks and turn them through the marinade. Cover and marinate in the fridge overnight, or for at least 4 hours.
- 04
Light a charcoal barbecue and let it burn for 30 to 40 minutes until the coals are glowing and covered in white ash (or heat a griddle pan or the oven grill to high). About 40 minutes before you want to eat, rinse the until the runs clear. Boil it in a large pan of well-salted for 6 to 8 minutes, until just tender at the edges, then drain. Melt 20 g of the in the pan, tip the back in, cover with a lid wrapped in a tea towel and steam over a very low heat for 25 to 30 minutes.
- 05
Thread the onto flat skewers, not too tightly.
- 06
Melt the remaining and mix it with the remaining liquid. Grill the over the hot coals (or on the griddle pan or under the grill) for 12 to 15 minutes, turning and basting with the , until the is cooked through with no pink at the centre (75°C inside).
- 07
Thread the whole onto their own skewers and grill them alongside until the skins blister and split.
To serve
- 08
Slide the off the skewers over the buttered , with the alongside.
- 09
Cut the second into wedges. Dust the with the and serve with the wedges.
Notes
- Grind and steep the saffron. It is the single most expensive ingredient and most of it is wasted if added whole and dry.
- Grated onion, juice included. The enzymes tenderise the chicken, which is why Persian kebabs are so soft.
- Flat skewers hold the meat still; round ones let it spin every time you turn them.
