Meatloaf
By Groceree
An American supper loaf of beef and pork held together by a panade of white bread soaked in milk, baked free-form on a tray so that it browns on every side instead of stewing in a tin. The glaze of ketchup, brown sugar and cider vinegar goes on in two coats part way through the bake, which dries it into a dark lacquer rather than leaving a sweet slick on top.

Instructions
Loaf
- 01
Heat the oven to 180°C and line a baking tray. Tear the into small pieces, pour the over it and leave it for 10 minutes, then mash it to a smooth paste with a fork.
- 02
Finely chop the and . Cook the in the over medium heat for 8 to 10 minutes until soft and translucent, add the for 1 minute, and tip it onto a plate to cool. Onions still hot from the pan start to cook the mixture before it is even shaped.
- 03
Put both in a large bowl with the paste, the cooled , the , , , the , chopped, the , and freshly ground . Mix with your hands only until you can no longer see separate streaks of and . Worked any further the meat turns springy and slices like a sausage.
- 04
Shape it on the tray into a roughly 24 cm long and 12 cm wide, doming the top slightly and smoothing the surface with wet hands so that it has no cracks.
- 05
Bake for 30 minutes, by which time the outside will be firm and lightly browned.
Glaze
- 06
Stir the , , and together. Brush half of it over the top and sides of the and return it to the oven for 25 minutes.
- 07
Brush on the rest and bake for a final 10 to 15 minutes, until the has darkened and looks tacky rather than wet, and a probe in the centre reads 71°C.
- 08
Rest on the tray for 10 minutes before slicing, in slices about 2 cm thick. Cut straight from the oven it sheds juice and the slices break apart.
Notes
- The panade is what keeps it tender. Starch from the soaked bread holds on to water that the meat proteins would otherwise squeeze out as they set, which is why a loaf bound with dry breadcrumbs comes out firmer and drier. Dry breadcrumbs will do at a push, 60 g of them with the full amount of milk.
- Baking it free-form on a tray gives you browned sides and a base that is not sitting in fat. In a loaf tin the sides steam pale and the fat has nowhere to go, so if you prefer a tin, line it with foil and lift the loaf out onto a tray for the glazing.
- It is as good cold as hot. Keep it whole, wrapped, in the fridge for up to 3 days, and slice it for sandwiches or fry the slices in a dry pan until the edges crisp. The raw mixture can also be shaped a day ahead and kept covered in the fridge; bake it from cold with an extra 10 minutes.

- Baked Chicken and PotatoesBone-in chicken thighs and drumsticks rubbed with smoked paprika and olive oil and roasted at 220°C on a bed of potato chunks, whole garlic cloves, lemon wedges and rosemary. Fat from the crisping skin drips into the potatoes, which get 10 more minutes on their own while the chicken rests, and the soft garlic and roasted lemon are squeezed into the pan juices that coat the potatoes.
- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
- Braised Short RibsBone-in beef short ribs seasoned and seared hard, then cooked slowly in the oven in reduced red wine and beef stock with carrots, onion, celery, garlic, thyme, rosemary and bay until the meat slips from the bone. Strained, skimmed of fat and boiled down, the braising liquid turns into a dark, glossy sauce, and gremolata or parsley scattered over at the end cuts the richness.
