Lumpiang Shanghai

By Groceree

Also known as Lumpia Shanghai · Filipino Spring Rolls

The thin Filipino spring roll: a seasoned pork and carrot filling rolled tightly in wheat wrappers into rolls no thicker than a finger and fried until the crust shatters. Rolling them thin is the whole point, because it puts crisp wrapper in every bite rather than a mouthful of meat.

Instructions

Filling

  1. 01

Take the out of the freezer and leave them to defrost in their packet. Finely grate the , chop the and very finely, slice the finely and beat one of the . Mix the with the , , , , , beaten egg, and freshly ground with your hands for 1 minute, until the mixture turns tacky and clings to itself. A loose slumps out of the ends while the rolls fry.

  2. 02

Fry a teaspoon of the mixture in a few drops of the in a small pan until cooked through with no pink left, then taste it. This is the only chance to correct the seasoning, and it should taste slightly salty on its own.

  3. 03

Cover and chill the for 20 minutes. Cold is far easier to roll into a thin, even line.

Dipping sauce

  1. 04

Crush the and put it in a small pan with the , all but 1 tablespoon of the , the and the . Bring to a simmer, stirring until the has dissolved.

  2. 05

Slake the in the remaining tablespoon of water, stir it in and simmer for 1 minute until the sauce turns glossy and thick enough to coat a spoon. Cool to room temperature before serving; it thickens further as it cools.

Rolling and frying

  1. 06

Beat the second in a small bowl. Peel off one defrosted and lay it as a diamond with a point towards you, keeping the rest under a damp tea towel so they do not dry out and crack.

  2. 07

Spoon a heaped tablespoon of into a line about 10 cm long across the lower third, and pat it into a thin sausage no thicker than your thumb.

  3. 08

Fold the near point over the and press it down to squeeze out any air, fold in both sides, then roll up tightly and seal the far point with the beaten . Air pockets expand in the and split the roll.

  4. 09

Repeat with the rest, laying the finished rolls out in a single layer rather than stacking them.

  5. 10

Heat the to 170°C in a deep pan; it should be at least 4 cm deep. Lower in three or four rolls at a time and fry for 5 to 6 minutes, turning, until deep golden all over. At this temperature the cooks through before the colours too far; cut the first one open to check the has no pink left.

  6. 11

Lift onto a wire rack, not kitchen paper, so steam escapes and the undersides stay crisp. Let the come back up to temperature between batches.

  7. 12

Cut each roll in half on a sharp diagonal and serve hot with the .

Notes

  • This makes about 24 rolls. Raw rolls freeze well: open-freeze them on a tray, bag them once solid, and fry from frozen at the same temperature for 2 minutes longer. Do not defrost them first, as the wrappers go soggy and tear.
  • Buy the thin wheat spring roll wrappers from the freezer of an Asian shop. Rice paper and the thicker pastry-style wrappers behave completely differently, and the fresh lumpia wrapper is a crêpe that is not fried at all.
  • Banana ketchup is a common dip in the Philippines: use it instead of the tomato ketchup in the sauce, or serve it on its own in place of the sauce.
