Soak the in cold water for at least 4 hours, or overnight. Drain it and steam in a muslin-lined steamer for 20 to 25 minutes until tender, and keep it covered while you make the larb.
- 02
Toast the uncooked in a dry pan over medium heat for 8 to 10 minutes, shaking often, until deep golden and nutty. Grind it to a coarse powder — not flour.
- 03
Cook the in a wide pan with the , breaking it up, until cooked through with no pink left. No oil: larb is not fried, and the keeps it tender.
- 04

Notes
- Khao khua, the toasted rice powder, is not optional. It gives larb its nutty smell and slight grittiness, and nothing else does that job.
- Cooked in water, not oil. Frying the pork makes it heavy and larb is meant to be light and sharp.
- Dress it off the heat. Lime juice boiled in the pan loses its edge immediately.
