Preparation
- 01
Rinse the several times until it runs clear, then put it in a pan with the 550 ml , bring to the boil, cover and cook on the lowest heat for 15 minutes. Leave it covered off the heat for 10 minutes. Meanwhile, toast the in a dry pan until golden.
- 02

- 03
Beat the with a pinch of , cook them as a flat omelette in a little of the and cut into long strips.
- 04
Cut the into matchsticks, the into long strips and the into strips. Stir-fry the carrot matchsticks in the rest of the for 2 minutes with a pinch of .
- 05

Rolling
- 06
Lay a shiny side down on a bamboo mat and spread over about three quarters of it in a thin, even layer.
- 07
Lay a sixth of the omelette, and , a strip of , a sixth of the strips and a sixth of the strips in lines across the , a third of the way up.
- 08
Roll away from you, pulling the mat tight as you go so the roll is dense. Loose kimbap falls apart when cut. Repeat with the remaining , and fillings to make 6 rolls.
- 09
Brush the outside with the remaining and leave for 1 minute to settle.
- 10
Slice with a very sharp wet knife, wiping it between cuts.
Notes
- Sesame oil and salt, not vinegar. This is the thing that most often gets kimbap wrong, and it changes the taste completely.
- Squeeze the spinach hard. Wet filling soaks the nori and the roll collapses.
- Wipe and re-wet the knife between cuts. A dry blade drags the rice and tears the seaweed.
