Notes
- Use day-old rice from the fridge. It is the one rule of fried rice everywhere, and it matters more than anything else in this recipe.
- No leftover rice? The day before, cook 150 g jasmine rice (it gives about 400 g cooked), spread it on a tray to cool and refrigerate it uncovered overnight.
- Thai fried rice is deliberately plain. The seasoning happens at the table with lime and prik nam pla, not in the wok.
- Add the sauces down the side of the hot wok. Poured over the rice they just make it wet.

Pandan leaves are kneaded into the eggs and sugar by hand, the Thai way, which dissolves the sugar and scents the custard, and the pumpkin cools completely so it cuts into clean wedges of custard framed in orange flesh.
