Gambas al Ajillo
By Groceree
Also known as Garlic Prawns · Garlic Shrimp
Prawns cooked hard and fast in olive oil with sliced garlic and dried chilli, carried to the table in the pan while the oil is still bubbling. The garlic goes into cold oil and comes up to temperature with it, so it turns sweet and pale gold instead of bitter.

Notes
- Garlic dropped into already hot oil burns before its flavour has come out and turns the whole dish acrid. Starting it in cold oil is the entire technique.
- Use raw prawns. The pre-cooked pink ones have nothing left to give and go rubbery in the time it takes to heat them through.
- The oil is half the dish, not a cooking medium to be drained off. If you buy prawns with heads on, fry the heads in the oil first and press them before lifting them out.
