Crush the and mix it with the , the and the , then submerge the bone-in, skin-on and and refrigerate for at least 4 hours, ideally overnight. The seasons right through and the acid tenderises.
Dredge
- 02
Mix the , , , , , , and 2 teaspoons of the in a wide bowl. Spoon in 3 tablespoons of the marinade and rub it through the with your fingers until it forms small clumps — those clumps become the craggy bits.
- 03
Lift each piece of straight from the marinade, letting the excess drip, and press it firmly into the . Turn it twice and press again.
- 04
Rest the coated pieces on a rack for 15 minutes so the crust hydrates and grips.
- 05
Heat the to 165°C in a large, deep, heavy pan no more than a third full, or in a deep-fat fryer. Fry the in batches so the stays at 165°C, for 14 to 18 minutes depending on size, turning once, until deep golden and cooked to 75°C at the bone.
- 06
Drain on a rack, never on paper, and sprinkle with the rest of the immediately.
Notes
- 165°C, not hotter. Bone-in chicken needs time, and a hot pan gives a dark crust around raw meat.
- Resting the coated chicken before frying is what stops the crust sliding off in the oil.
- A rack for draining keeps the underside crisp; kitchen paper steams it soft.

- Baked Chicken and PotatoesBone-in chicken thighs and drumsticks rubbed with smoked paprika and olive oil and roasted at 220°C on a bed of potato chunks, whole garlic cloves, lemon wedges and rosemary. Fat from the crisping skin drips into the potatoes, which get 10 more minutes on their own while the chicken rests, and the soft garlic and roasted lemon are squeezed into the pan juices that coat the potatoes.
- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
- Braised Short RibsBone-in beef short ribs seasoned and seared hard, then cooked slowly in the oven in reduced red wine and beef stock with carrots, onion, celery, garlic, thyme, rosemary and bay until the meat slips from the bone. Strained, skimmed of fat and boiled down, the braising liquid turns into a dark, glossy sauce, and gremolata or parsley scattered over at the end cuts the richness.
