Ingredients

  • smoked haddock400 g
  • milk600 ml
  • floury potatoes500 g
  • onions1
  • leeks (optional)1
  • butter40 g
  • bay leaves1
  • double cream (optional)100 ml
  • chives3 tbsp
  • black pepper
  • water400 ml

Instructions

  1. 01

Poach the undyed , skin on, in the with the leaf for 5 minutes, until it just flakes. Lift it out and strain the — that smoky is the soup base.

  2. 02

Flake the fish into large pieces, discarding skin and bones.

  3. 03

Finely chop the , slice the if using, and peel the and dice them into 2 cm cubes.

  4. 04

Soften the and the in the for 8 minutes without colouring.

  5. 05

Add the and the , and simmer for 15 minutes until soft.

  6. 06

Mash about half the roughly in the pan to thicken the soup. Leave the rest in pieces.

  7. 07

Pour in the smoky and bring back to a gentle simmer. Do not boil hard or the catches.

  8. 08

Return the , add the if using, and warm through without stirring too much.

  9. 09

Season with plenty of freshly ground — the fish usually brings enough salt — then chop the and scatter them over.

Notes

  • Undyed haddock. The bright yellow kind is dyed and tastes harsher, and it turns the soup an alarming colour.
  • Mash half the potato in. It is the only thickener and gives the texture the soup is known for.
  • Taste before salting. Smoked haddock varies a great deal and often needs no extra salt at all.
