Cottage Pie
By Groceree
Beef mince simmered down with onion, mushrooms and red wine until the gravy is thick enough to hold the shape of a spoon, then covered with mustard mash and grated cheddar and baked. Yeast extract and a long open simmer stand in for the depth a whole-cut braise would take hours to build.

Instructions
Filling
- 01
Heat the in a wide heavy pan over a high heat and cook the in two batches, pressing it flat and leaving it alone until the underside is deep brown, about 5 minutes each time. Tip each batch into a bowl.
- 02
Chop the and coarsely grate the . Drop the heat, add them to the pan and cook for 8 minutes until softened.
- 03
Slice the , add them and cook for 8 minutes more, until they have released their liquid and it has cooked away again, then crush the and stir it in 1 minute before the end.
- 04
Pour in the and scrape the brown crust off the base of the pan while it bubbles, until almost no liquid is left.
- 05
Return the with the , , and . Simmer uncovered for 40 minutes, stirring now and then, until the level has dropped by about a third.
- 06
Mix the with the cold , stir it in and cook for 2 minutes more. The gravy should cling to the and close over slowly behind a spoon dragged across the pan. Fish out the and stalks and season with and .
Topping
- 07
Peel the and cut them into even chunks, then boil them in well salted water for 18 to 20 minutes, until a knife slides in with no resistance. Drain and leave them in the colander for 5 minutes to steam off, then rice or mash them smooth.
- 08
Beat in the , and and season with and . Keep the mash stiff rather than loose, so it sits on the instead of sinking into it.
- 09
Heat the oven to 200°C. Tip the into a dish of about 30 by 20 cm, level it off and leave it for 10 minutes to stop steaming.
- 10
Drop the mash over in spoonfuls, join them up with the back of the spoon and press it against the rim of the dish all the way round so the gravy cannot climb the sides.
- 11
Grate the and scatter it over, run a fork across the surface and bake for 30 to 35 minutes, until the cheese has browned and the gravy bubbles at the edges. Rest for 10 minutes before serving.
Notes
- Use mince with around 15 percent fat. Lean beef mince turns dry and grainy over a 40 minute simmer and leaves nothing to carry the wine and the mushrooms.
- Letting the filling stand before topping it matters. Mash spooned onto a filling that is still steaming slides about and sinks, and the two layers end up muddled together.
- Assembled and unbaked it freezes well. Wrap the dish and bake from frozen at 180°C for about 1 hour, then at 200°C for the last 15 minutes to colour the cheese. Check that the centre is piping hot (75°C) and give it longer if not.
