Chili con Carne
By Groceree
Also known as Chili
Texas-style chilli: cubes of beef chuck simmered for three hours in a paste of toasted dried chillies with cumin and oregano, and no beans. The chillies are whole ones rehydrated and blended rather than powder, which is where the dark red colour and the fruity depth behind the heat come from.

Instructions
Chilli paste
- 01
Pull the stems off the (, and ), shake out the seeds and tear them open flat. Heat a dry frying pan over medium heat and press the flattened down in it for about 30 seconds a side, until they smell sweet and toasty and turn pliable. Watch them closely. A chilli that darkens or smokes has burnt, and burnt chilli makes the whole pot bitter.
- 02
Put the toasted in a bowl, bring 500 ml of the to the boil, pour it over and weigh them down with a saucer. Leave for 20 minutes until completely soft.
- 03
Blend the with their soaking liquid to a smooth, dark red paste. Set aside.
Stew
- 04
Chop the and crush the . Cut the into 3 cm cubes, pat them dry and season with 1½ teaspoons of the . Heat the in a heavy casserole over high heat and brown the cubes in three or four batches, leaving each batch undisturbed for 1 minute at a time so it takes real colour. Crowding the pan makes the meat steam instead, and you lose the browned base the whole dish is built on.
- 05
Lift out the . Turn the heat to medium, add the and cook for 8 to 10 minutes until soft and golden, scraping up the stuck brown bits as they release.
- 06
Add the , and and stir for 1 minute until fragrant.
- 07
Return the with any juices, pour in the and the remaining 500 ml , and bring to a bare simmer. The liquid should just cover the meat.
- 08
Cover with the lid slightly ajar and simmer very gently for 2½ to 3 hours, stirring every 30 minutes, until the gives way completely when pressed with a spoon and the fat has risen to the surface in an orange slick.
- 09
Whisk the with the and stir it in. Simmer uncovered for 15 minutes until the sauce thickens enough to coat the meat rather than pool around it.
- 10
Stir in the and , then taste and season with the rest of the , if needed, and the . Leave it to sit off the heat for 15 minutes. Chop the and cut the into wedges, then serve it with the , and wedges.
Notes
- It is noticeably better the next day, once the chilli flavours have settled and the fat has set on top and can be lifted off if you want it leaner. It keeps for four days in the fridge and freezes well.
- Cubed chuck is the Texan way and gives you strands of meat rather than grains. With 1.3 kg of beef mince instead, brown it hard, cut the simmer to 1½ hours and expect a looser texture.
- Masa harina thickens and adds a faint toasted corn flavour at the same time. Fine cornmeal or two crushed corn tortillas will do the same job; plain flour thickens but tastes of nothing. Beans are not traditional here, but a drained tin of kidney beans stirred in for the last 20 minutes will not ruin it.

- Baked Chicken and PotatoesBone-in chicken thighs and drumsticks rubbed with smoked paprika and olive oil and roasted at 220°C on a bed of potato chunks, whole garlic cloves, lemon wedges and rosemary. Fat from the crisping skin drips into the potatoes, which get 10 more minutes on their own while the chicken rests, and the soft garlic and roasted lemon are squeezed into the pan juices that coat the potatoes.
- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
- Braised Short RibsBone-in beef short ribs seasoned and seared hard, then cooked slowly in the oven in reduced red wine and beef stock with carrots, onion, celery, garlic, thyme, rosemary and bay until the meat slips from the bone. Strained, skimmed of fat and boiled down, the braising liquid turns into a dark, glossy sauce, and gremolata or parsley scattered over at the end cuts the richness.
