Chicken Shawarma
By Groceree
Thigh meat marinated in lemon, garlic and warm spices, then roasted hot until the edges char and the fat crisps. No spit needed: a hot oven and a final minute in a pan give you the same caramelised edges to pile into flatbread with tahini sauce.

Instructions
Marinade
- 01
Crush the and whisk it with the , , , , , , , , , , , and in a large bowl until you have a loose paste.
- 02
Add the skinless , opened out flat, and rub the marinade into every surface. Cover and leave in the fridge for at least 2 hours, and up to 24. Take the bowl out 30 minutes before cooking so the meat is not fridge-cold.
Roasting
- 03
Heat the oven to 220°C. Line a large roasting tin with foil and lay the out flat in a single layer, spaced apart. Crowding them steams the meat instead of browning it, so use two tins if you need to.
- 04
Roast for 25 to 30 minutes, turning once halfway, until the is cooked through with no pink inside and the edges are dark and caramelised.
- 05
Lift the onto a board and rest for 5 minutes, then slice across the grain into thin strips.
- 06
For the crisp edges a spit would give you, heat a dry frying pan until very hot, add the sliced with a spoonful of the tin juices and fry hard for 1 to 2 minutes without stirring much, so parts of it catch and crisp.
Tahini sauce
- 07
Stir the , 2 tbsp of the , the grated to a paste and the together in a bowl. It will seize into a stiff paste; this is meant to happen.
- 08
Add the a little at a time, whisking after each addition, until the sauce turns pale and pourable, about the thickness of double cream. Taste and add as much of the remaining as you like, and more if needed.
To serve
- 09
Warm the in the oven for 1 minute so they fold without cracking. Slice the and , thinly slice the and roughly chop the .
- 10
Spread each one with sauce, pile on the , then add the , , , and, if using, sliced lengthways. Sprinkle with , roll up tightly and eat straight away.
Notes
- Thighs stay juicy under the high heat, but chicken breast works if you prefer it: cut it into thick strips and roast for 15 to 18 minutes.
- The marinade is better the longer it sits. Overnight is the sweet spot, and marinated raw chicken freezes well in its bag for up to 3 months.
- Leftover sliced chicken keeps for 3 days in the fridge and reheats best in a hot dry pan. Tahini sauce thickens as it stands, so whisk in a splash of water before serving it again.
