Chicken Pot Pie
By Groceree
Chicken thighs poached in stock and folded into a velouté with carrot, celery, leek and peas, baked under a lid of all-butter puff pastry. The sauce is deliberately taken thicker than it needs to be on the hob, because the chicken and the vegetables go on releasing liquid in the oven and a thin filling boils up and lifts the lid off.

Filling
- 01
Bring the to a bare simmer in a saucepan, slide in the boneless, skinless and poach them for 12 to 15 minutes, until firm and no longer pink in the middle. Lift them out to cool and keep the hot. Poaching leaves you with meat in whole pieces and a that now tastes of , which is where the sauce gets its flavour.
- 02
Finely chop the , cut the and into 1 cm dice and slice the . Melt the in a wide pan and cook the , , and gently with a pinch of for about 10 minutes, until they are soft but have taken no colour. A velouté should stay ivory, and browned vegetables turn it grey.
- 03
Stir in the and cook for 2 minutes, then add the hot a ladleful at a time, whisking each one in before the next. Simmer for 8 to 10 minutes, until a spatula drawn across the base of the pan leaves a channel that closes only slowly.
- 04
Chop the . Off the heat, stir in the , the , the , the chopped and the , and season well with and freshly ground . Cut the cooled into 3 cm pieces and fold it through.
- 05
Spread the in a shallow dish and leave it until it is cold, about 30 minutes, or cover it and refrigerate. laid over a warm starts melting before it bakes.
Pastry
- 06
Heat the oven to 200°C with a baking tray on the middle shelf. Spoon the cold into a 1.5 litre pie dish, standing a pie funnel or an upturned eggcup in the centre to hold the lid clear of the sauce.
- 07
Beat the . Cut a 2 cm strip off one long side of the chilled all-butter sheet. Wet the rim of the dish, press the strip onto it all the way round to make a collar and brush the collar with beaten . grips far better than it grips china, and this collar is what keeps the lid anchored while it rises.
- 08
Lay the rest of the sheet over the dish, press it down onto the collar and trim it flush. Knock up the edge by tapping it horizontally with the back of a knife, which separates the layers so they open out in leaves.
- 09
Chill the assembled pie for 15 minutes, then brush the top with , keeping it off the cut edge, and make a small cross over the funnel.
- 10
Slide the dish straight onto the heated tray and give it 25 to 30 minutes. It is ready when the lid has risen into a deep gold dome and sauce is working its way up around the funnel. Leave it 5 minutes to settle.
Notes
- Thighs rather than breast. The chicken is cooked twice here, once in the stock and again under the pastry, and breast meat comes out of that stringy where thigh stays juicy. With breast, poach it for 8 minutes only and cut it into larger pieces.
- Leftover roast chicken makes a quicker version: use about 500 g of it torn into pieces, skip the poaching and make the velouté with 700 ml of ready-made stock, adding the chicken at the end with the peas.
- The filling keeps for 2 days in the fridge and is easier to work with cold. For individual pies, divide it between four ovenproof bowls, cut lids with a 2 cm overhang and bake for about 20 minutes.

- Baked Chicken and PotatoesBone-in chicken thighs and drumsticks rubbed with smoked paprika and olive oil and roasted at 220°C on a bed of potato chunks, whole garlic cloves, lemon wedges and rosemary. Fat from the crisping skin drips into the potatoes, which get 10 more minutes on their own while the chicken rests, and the soft garlic and roasted lemon are squeezed into the pan juices that coat the potatoes.
- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
- Braised Short RibsBone-in beef short ribs seasoned and seared hard, then cooked slowly in the oven in reduced red wine and beef stock with carrots, onion, celery, garlic, thyme, rosemary and bay until the meat slips from the bone. Strained, skimmed of fat and boiled down, the braising liquid turns into a dark, glossy sauce, and gremolata or parsley scattered over at the end cuts the richness.
