Chicken Kyiv
By Groceree
Also known as Chicken Kiev
Chicken breast wrapped around a garlic and parsley butter, crumbed, fried until golden and finished in the oven so the butter is still liquid when the crust is cut. Freezing the butter hard and crumbing the parcels twice is what keeps it inside the chicken instead of in the pan.

Instructions
Garlic butter
- 01
Crush the to a paste, finely chop the and grate the zest of the . Beat the softened with the , , zest, and until it is evenly green.
- 02
Spoon it onto clingfilm, roll it into a log about 3 cm across and twist the ends tight. Freeze for at least 1 hour, until it is solid enough to tap on the worktop.
- 03
Cut the frozen log into four equal batons and put them back in the freezer while you prepare the . that has gone soft will squeeze out of the seam as you seal the parcel, and the whole thing leaks in the pan.
Chicken
- 04
Lay each flat and cut a deep horizontal pocket into the thick side, stopping about 1 cm short of the other edges so the pocket stays closed on three sides.
- 05
Cover with clingfilm and beat the thick areas with a rolling pin until the is an even 1 cm thick, working from the middle outwards. Do not thin the edges; that is where the seal comes from.
- 06
Season inside the pocket with a little of the , push a frozen baton in, and press the opening shut. Fold any loose flap of meat over the seam and pat the parcel into a neat oval.
Crumb
- 07
Set out three shallow bowls with the , the , beaten, and the , and season the with the rest of the .
- 08
Roll a parcel in , then , then crumbs, pressing the crumbs on firmly. Then put it back through the and the crumbs a second time. The double coat is the insurance: the first layer plugs the seam, the second covers anything the first one missed.
- 09
Check each parcel all over for bare patches and dab crumbs onto any you find. Chill the finished parcels, seam side down, for at least 30 minutes.
Cooking
- 10
Heat the oven to 190°C. Pour the into a deep pan to a depth of about 3 cm and bring it to 170°C, when a dropped in sizzles steadily and floats within 2 seconds.
- 11
Fry two parcels at a time, seam side down first, for about 2 minutes a side until deep golden. Lift them out with a slotted spoon rather than tongs, which can split the crust, and drain on a rack.
- 12
Transfer to a baking tray and bake for 15 to 18 minutes, until a probe pushed into the meat beside the reads 75°C.
- 13
Rest for 3 minutes, then serve immediately, whole, so each person gets the moment where the runs out.
Notes
- The butter has to go in frozen solid. Everything else in this recipe is ordinary breadcrumbing, and almost every burst Kyiv comes down to butter that was merely cold.
- Frying then baking is deliberate. Deep-frying alone browns the crust long before a 1 cm-thick parcel is cooked through, and oven-baking alone gives a pale, dry crumb.
- Crumbed parcels freeze well for a month on a tray, then bagged. Cook them from frozen: fry as above, then bake for 35 to 40 minutes, checking the temperature in the meat rather than guessing.

- SharlotkaRussia's everyday apple cake: eggs and sugar whisked until thick and pale, flour folded in by hand, and the airy batter poured over a tin of tart apple chunks. There is no baking powder, as the eggs alone raise the sponge, which bakes light and moist around the soft, sharp apples under a thin, crackly sugar crust.
- Tykvennaya KashaRussian millet porridge for autumn mornings: diced pumpkin simmered in water until soft, then well-rinsed millet, then whole milk with a little sugar, cooked gently until thick, creamy and orange. Butter is stirred in at the end, and an optional 20 to 30 minutes in the oven gives the golden-skinned, baked texture of kasha from a Russian stove.
