Notes
- Anchovies are not optional and not a modern addition. Worcestershire sauce, which the original used, is itself anchovy-based.
- No cream. The emulsion of yolk and oil is what makes it creamy, and cream is a shortcut that tastes like one.
- Dry the leaves properly in a spinner or a cloth. Water on the leaves thins the dressing straight off the salad.
- The dressing uses raw egg yolks; use very fresh or pasteurised eggs, and avoid it for pregnant women, young children and the elderly.

- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
