Bulgogi

By Groceree

Also known as Korean BBQ Beef

Thinly sliced beef marinated in soy, sesame and grated pear, then seared hard and fast so the sugars caramelise before the meat has time to toughen.

Ingredients

  • beef sirloin or ribeye700 g
  • soy sauce6 tbsp
  • Asian pear½
  • brown sugar2 tbsp
  • sesame oil2 tbsp
  • garlic cloves5
  • fresh ginger2 cm
  • spring onions4
  • onions1
  • black pepper
  • sesame seeds1 tbsp
  • steamed rice (optional)
  • lettuce (optional)1 head

Instructions

  1. 01

Freeze the for 30 minutes before slicing it very thinly — it firms just enough to cut paper-thin, which is the whole texture of the dish.

  2. 02

Peel and grate the and the , crush the , and mix them with the , , and plenty of freshly ground .

  3. 03

Turn the through the marinade and leave it in the fridge for at least 30 minutes, or up to 4 hours. Meanwhile, slice the and cut the into 4 cm lengths. The tenderises, so longer is not better.

  4. 04

Get a heavy pan or griddle very hot. Cook the in batches in a single layer for 1 to 2 minutes a side, letting the marinade catch and caramelise.

  5. 05

Add the sliced and the , cut into lengths, 1 minute before the end so they soften but keep bite.

  6. 06

Toast the in a dry pan until golden and scatter them over. Serve with and leaves for wrapping, if you like.

Notes

  • Asian pear is the traditional tenderiser and adds a clean sweetness. A grated apple or kiwi works, but kiwi acts fast — half an hour maximum.
  • Crowding the pan is fatal here: the marinade boils and the beef greys instead of caramelising.
  • Leftovers are excellent in fried rice the next day.
