Bibimbap

By Groceree

A bowl of warm rice under neat piles of vegetables, each one cooked and seasoned separately so it keeps its own flavour, with marinated beef, a fried egg and a spoonful of sweet-hot gochujang sauce. Stir it all together at the table before the first bite.

Instructions

Rice, sauce and beef marinade

  1. 01

Rinse the under cold running water until it runs clear. Slice the thinly across the grain into strips, cut the and into matchsticks, slice the , grate the , chop the and cut the into strips.

  2. 02

Cook the rinsed in 450 ml of : bring it to the boil, cover, turn the heat to its lowest and cook for 15 minutes, then leave it covered off the heat for 10 minutes more. Keep it warm, as the bowl is built on hot .

  3. 03

Whisk the , , , , grated and together, loosening with a tablespoon or two of water until the falls thickly off the spoon. Set it aside so the flavours settle.

  4. 04

Mix the strips with the , , , , and and leave to marinate in the fridge while you cook the , at least 20 minutes.

Vegetables

  1. 05

Each vegetable is cooked and seasoned on its own, then kept in a separate pile. It takes a few more minutes than throwing them together, and it is the whole point of the dish: every mouthful tastes of one thing until you stir the bowl.

  2. 06

Blanch the in boiling salted water for 30 seconds, drain and refresh under cold water, then squeeze it dry in your hands. Season it with a third of the , 1 tablespoon of , a pinch of and a scatter of .

  3. 07

Blanch the in the same pan of water for 2 minutes until just tender but still crunchy. Drain well and dress with another third of the , 1 tablespoon of , a pinch of and a few .

  4. 08

Heat a little in a frying pan over medium-high heat and cook the matchsticks for 2 minutes with a pinch of , until bright and barely softened. Lift them out and keep them apart from everything else.

  5. 09

Wipe the pan, add a little more and cook the matchsticks for 2 to 3 minutes with a pinch of , until just tender. Take it out before it collapses.

  6. 10

Wipe the pan again, add a little more and fry the sliced over high heat for 4 to 5 minutes until browned at the edges and caramelised. Add the remaining and the for the final 30 seconds and let it cook away.

Beef

  1. 11

Get the same pan very hot, add the marinated in a single layer and sear for 2 to 3 minutes, turning once, until browned and glossy. Cook it in two batches rather than crowding the pan.

  2. 12

Fry the in a little until the whites are set and the yolks are still runny. A soft yolk stirred through the is what binds the bowl together.

  3. 13

Divide the hot between four wide bowls. Arrange the , , , , and in neat sections around the edge, leaving the middle clear.

  4. 14

Slide an into the centre of each bowl, scatter over the strips and add a generous spoonful of the . Serve with and the rest of the , and tell everyone to stir the bowl thoroughly before eating.

Notes

  • For a vegetarian bowl, leave out the beef and add a second pan of mushrooms or some pan-fried firm tofu. Check the gochujang label, as some brands are made with a fish-based stock.
  • The vegetables can all be cooked a day ahead and kept in separate containers in the fridge. Bring them back to room temperature while the rice cooks; only the rice and the egg need to be hot.
  • For dolsot bibimbap, brush a hot stone or cast-iron bowl with sesame oil before adding the rice. Leave it over a medium flame for 3 to 4 minutes while you build the bowl, and the bottom layer turns into a crisp golden crust.
  • The yolks of the fried eggs stay runny; for anyone pregnant, elderly or unwell, use pasteurised eggs or fry them until the yolks are set.
