Bánh Xèo
By Groceree
Also known as Vietnamese Pancake
A rice flour and turmeric crepe, poured thin into a screaming hot pan so it sizzles — which is what the name means — and folded over pork, prawns and beansprouts.

Notes
- The pan must be very hot and the batter very thin. A thick pour gives a pancake, not the brittle lace bánh xèo should be.
- Sparkling water in the batter helps the crispness. Rest and re-whisk, because the rice flour sinks.
- Turmeric is for colour, not flavour. There is no egg in the batter despite how yellow it looks.
