Instructions

Pickles

  1. 01

Peel and julienne the and . Warm the , and until dissolved, pour over the and and leave for at least 30 minutes. They keep two weeks in the fridge and improve after the first day.

Pork

  1. 02

Slice the 3 mm thin. Finely chop the and crush the , mix them with the , and , and marinate the in the fridge for 20 minutes.

  2. 03

Grill, or fry in the over high heat, for 3 to 4 minutes a side until the edges caramelise and the is no longer pink inside.

To build

  1. 04

Warm the for 5 minutes in a hot oven so the crust crackles, then split them lengthways without cutting all the way through.

  2. 05

Pull out a little of the soft interior — this is what makes room for the filling and keeps the bread ratio right.

  3. 06

Spread one side with and the other with , then fill with , drained , cut into strips, and sliced . Add a few drops of if you have it.

Notes

  • The bread matters as much as the filling: it must be light and shatteringly crisp, not a dense sourdough.
  • Drain the pickles well or the baguette goes soggy before you finish it.
  • Pâté sounds optional and is not — it is what gives bánh mì its savoury backbone.
